Swedish Chocolate Balls 

This is a very popular Swedish treat enjoyed by kids and grown ups alike. They don’t require a oven to bake in just a nice cold fridge. So I wanted to share a recipe i found on gretchencooks. Note that I’ve slightly modified the recipe  This recipe makes 15 delicious chocolate spheres.

ingredients:

  • 11/2 cups quick-cooking oatmeal (DON’T USE THE INSTANT PACKS)
  • ¼ cup sugar
  • 6 tablespoons softened butter
  • 2 tablespoons cocoa powder
  • ½ tablespoon vanilla extract
  • 1 tablespoon  coffee (Not hot coffee as it will make it impossible to roll the mixture into balls)

For decoration:

  • Coconut flakes or nib sugar. Colorful sprinkles will also work

Combine the butter, sugar, oats, cocoa powder, vanilla extract and coffee into a bowl. You’ll have to knead it with your hands (or a wooden spoon if you don’t want to get your hands dirty) until the mixture doesn’t have any lumps of butter. Take some mixture and roll it into the shape of a ball roughly the size of a meatball. repeat until all  of the mixture are balls. Pour nib sugar, coconut flakes or sprinkles onto a plate and roll the balls until they are covered entirely. Put them in the fridge for one hour then serve to your friends or eat them by yourselves.
